Spiced Nuts

Cooking Light's version of this uses vanilla, sugar, salt, cinnamon, allspice, and cardamom (on almonds, pecans, and macadamia nuts), but I made the recipe below for Jim. Be creative!

Ingredients

  • 1  tablespoon Liquid Smoke
  • 1  large egg white
  • 1 1/2  cups  almonds
  • 1 1/2  cups  whole cashews
  • 1  teaspoon  salt
  • 3/4  teaspoon  Ancho Chipotle chili powder
  • 3/4  teaspoon  sweet mesquite spice rub
  • 1/4  teaspoon  ground red pepper

Preparation

1. Preheat oven to 325°.
2. Combine Liquid Smoke and egg white in a large bowl, stirring with a whisk until foamy. Stir in nuts. Combine salt and the remaining ingredients in a small bowl, and sprinkle salt mixture over nuts, tossing to coat. Place nut mixture on a baking sheet lined with parchment paper. Bake at 325° for 15 minutes. Remove pan from oven. Turn off oven. Toss nuts, and break large pieces apart. Return pan to oven, and leave pan in oven for 10 minutes. Cool to room temperature.
