These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Citrus Pudding

If you're sure to get some pudding and some whipped cream in each bite, this tastes just like a creamsicle!

Yield: 4 servings (serving size: 1/2 cup)

Ingredients:
3 tablespoons sugar
1 teaspoon grated orange rind
2 cups orange juice
3 tablespoons cornstarch
1/4 teaspoon salt
1 tablespoon lemon juice
1 teaspoon unsalted butter
1 cup Cool Whip

Preparation:
1. Combine sugar and orange rind in a small saucepan; crush with a wooden spoon. Stir in orange juice, cornstarch, and salt, stirring well. Bring to a boil, stirring constantly. Boil 2 minutes or until thickened, stirring constantly. Remove from heat; stir in lemon juice and butter. Pour pudding into a bowl; cover surface of pudding with plastic wrap. Chill.
2. Spoon 1/2 cup pudding into each of 4 dessert bowls or glasses; top each serving with 1/4 cup Cool Whip.
