These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Spicy Cabbage Slaw with Peanuts

This is not your typical creamy coleslaw, so don't go into it thinking it is. It took Jim and me a few bites for it to grow on us, but the flavors are really good. It's just more like a spicy cabbage salad than a coleslaw.
We served this with Slow Cooker Pulled Pork sandwiches and corn on the cob ~ delicious!
We used diced jalapeno instead of the serrano chile and a bag of coleslaw mix instead of the two colors of cabbage (easier = still tasty!)

Yield: 8 servings (serving size: 1 1/4 cups salad and 2 teaspoons peanuts)

Ingredients:
* 1/2 teaspoon ground cumin
* 1 1/2 tablespoons sugar
* 1 tablespoon fresh lime juice
* 1 teaspoon kosher salt
* 1 1/2 teaspoons white wine vinegar
* 1 teaspoon grated peeled fresh ginger
* 1/4 teaspoon black pepper
* Dash of ground red pepper
* 3/4 cup thinly sliced green onions
* 1/2 cup finely chopped fresh cilantro
* 1 tablespoon minced fresh mint
* 1 minced seeded serrano chile
* 1 pint grape tomatoes, halved
* 4 cups thinly sliced green cabbage
* 4 cups thinly sliced red cabbage
* 1/3 cup chopped dry-roasted peanuts

Preparation:
1. Combine cumin and next 9 ingredients (through red pepper) in a small bowl; set aside.
2. Put cabbage in a large bowl. Add onions and next 4 ingredients (through tomatoes); toss to combine. 3. Pour mixture from small bowl over veggies, stir gently to combine.
4. Serve sprinkled with peanuts.
