These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Family Casserole

My mom made this pretty often when I was growing up ~ I replaced the hamburger with ground turkey, but other than that, you can't beat a recipe that has a layer of lean ground meat, yummy veggies, and then topped with mashed potatoes!


Yields: 8 servings
Ingredients:
* 1 pound ground turkey
* 1/2 cup diced onion
* 2 cloves garlic, minced
* 1 can condensed tomato soup
* 1 can condensed cream of mushroom soup
* 1 can cut green beans, drained
* 1 can corn, drained
* 4 cups mashed potatoes

Preparation:
1.  Heat a large skillet over medium heat; add ground turkey. When turkey is almost thoroughly cooked, add onion and garlic; cook until turkey is fully cooked and onion has softened. Spread mixture in a 9x12 baking dish coated with cooking spray.
2. Preheat oven to 350 degrees.*
3. In a large bowl, combine soups, beans, and corn; mix thoroughly and spread over meat layer in baking dish.
4. Carefully top soup and veggie mix with mashed potatoes, spreading smoothly.
5. Cover baking dish with aluminum foil and bake for 30 minutes. Cool slightly before serving.
* You can also microwave this recipe by covering the baking dish with wax paper and microwaving for 10 minutes or until hot all the way through.
