These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Mom's Chicken and Rice

This is a family favorite, for which I had a craving. :)

Yield: 6 servings
Total time: 2 hours, 10 minutes

Ingredients:
~ Cooking spray
~ 1 1/4 cup  uncooked rice (not minute)
~ 1 pkg. dry onion soup mix
~ 1 can cream of mushroom soup
~ 1 can water
~ 6 servings of chicken (any pieces you want)
~ 1 small can mushrooms

Preparation: 
1. Preheat oven to 300 degrees.
2.  Coat a large casserole dish with cooking spray; mix rice and next 3 ingredients (through water) in dish.
3. Place cut-up chicken on top of rice mixture, sprinkle with mushrooms.
4. Cover and bake for 2 hours.
