These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Cheddar-Beer Sauce Broccoli

Wanna dress up your broccoli? Cheese and beer do the trick!


Yield: Serves 6
Ingredients:
12 ounces broccoli florets (5 cups raw) 
1/2 cup beer, divided 
1 1/2 tablespoons flour
3/4 cup fat-free milk
3/4 cup reduced-fat cheddar
1 tablespoon chives
1/2 teaspoon grated lemon rind
1/4 teaspoon kosher salt

Preparation:
1. Arrange broccoli in a steamer. Steam, covered, 4 minutes or until crisp-tender. Place broccoli in a large bowl.
2. Whisk 1/4 cup beer and flour in a bowl. Combine milk and 1/4 cup beer in a pan; bring to a simmer. Stir in flour mixture; bring to a boil. Reduce heat; simmer 2 minutes. Add cheddar, chives, lemon rind, and kosher salt. Pour over broccoli.
