These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Dijon, Thyme, and Pine Nut Broccoli

We had this as a side with Maple-Mustard Glazed Chicken and Truffled Mac and Cheese, and this whole meal is going to make future appearances on our dinner table!


Yield: Serves 6 (serving size: 2/3 cup)
Ingredients:
12 ounces broccoli florets (5 cups raw)
1 tablespoon minced shallots
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
2 teaspoons chopped fresh thyme
2 tablespoons toasted pine nuts 
Preparation:
1. Arrange broccoli in a steamer. Steam, covered, 4 minutes or until crisp-tender. Place broccoli in a large bowl.
2. Combine minced shallots, olive oil, lemon juice, Dijon mustard, and chopped fresh thyme in a bowl; stir with a whisk. Add broccoli and pine nuts to oil mixture; toss.
