These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Sautéed Spinach and Pine Nuts

The pine nuts add a yummy crunch to a good superfood!


Yield: 4 servings
Ingredients:
2 teaspoons canola oil
1 tablespoon minced shallots
1 (9-ounce) bag fresh baby spinach
1 tablespoon toasted pine nuts
1/8 teaspoon salt
 
Preparation:
Heat canola oil in a large skillet over medium-high heat. Add shallots; sauté 2 minutes. Add spinach; sauté 2 minutes or until spinach wilts. Stir in pine nuts and salt.
