These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Swiss Chard with Warm Bacon Vinaigrette

We used spinach in place of the Swiss chard (the commissary didn't have any) with fried eggs on top for breakfast ~ great way to get your veggies in the morning!
 

Yield: Serves 4 (serving size: about 1/2 cup)
Ingredients:
2 slices applewood-smoked bacon
2 teaspoons cider vinegar
1/4 teaspoon freshly ground black pepper
6 cups chopped Swiss chard

Preparation:
Heat a medium nonstick skillet over medium heat. Add bacon to pan; cook until crisp. Remove bacon from pan; crumble. Remove pan from heat. Add vinegar and freshly ground black pepper to pan, stirring with a whisk. Pour vinegar mixture over Swiss chard; toss.
