- 1 cup canned pumpkin
- 1 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/2 cup vegetable oil
- 1 egg large
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin pie spice
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 cups all purpose flour
- 1 cup chocolate chips
- 2 tablespoons chocolate chips to place on top before baking
- In a large bowl, mix the pumpkin, granulated sugar, brown sugar, vegetable oil egg, vanilla extract, cinnamon and pumpkin pie spice.
- Slowly fold in the flour, baking powder and baking soda.
- Fold in one cup chocolate chips.
- Cover and chill the dough in the fridge for 1 hour.
- Preheat the oven to 350 degrees.
- Drop by heaping tablespoon full onto an ungreased baking sheet about 2" apart and add a few extra chocolate chips to the top of each cookie.
- Bake for 12-14 minutes.
- Remove from the oven and let cool. Enjoy!
