These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Super Soft Pumpkin Chocolate Chip Cookies

Ingredients
  • 1 cup canned pumpkin
  • 1 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1 egg large
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 cups all purpose flour
  • 1 cup chocolate chips
  • 2 tablespoons chocolate chips to place on top before baking
Instructions
  1. In a large bowl, mix the pumpkin, granulated sugar, brown sugar, vegetable oil egg, vanilla extract, cinnamon and pumpkin pie spice.
  2. Slowly fold in the flour, baking powder and baking soda.
  3. Fold in one cup chocolate chips.
  4. Cover and chill the dough in the fridge for 1 hour.
  5. Preheat the oven to 350 degrees.
  6. Drop by heaping tablespoon full onto an ungreased baking sheet about 2" apart and add a few extra chocolate chips to the top of each cookie.
  7. Bake for 12-14 minutes.
  8. Remove from the oven and let cool. Enjoy!
