These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Asian Buffalo Lettuce Cups

Jim said this was as good as PF Chang's (his favorite chain restaurant), so I'd say they were good!
The original recipe uses ground turkey and napa cabbage leaves, but we used buffalo and lettuce because we had both on hand already. Either way would be delicious! And for you vegetarians out there, I bet Good Grounds or Morningstar Meal Starters would be a great meat substitute!

Prep Time: 30 minutes
Yield: 4 servings (serving size: 3 filled cabbage cups)
Ingredients
* 1 teaspoon grated peeled fresh ginger
* 1 1/4 pounds ground buffalo
* 1/2 cup thinly sliced green onions
* 1 tablespoon brown sugar
* 2 tablespoons chopped fresh cilantro
* 2 tablespoons chopped fresh mint
* 2 tablespoons fresh lime juice
* 1 1/2 tablespoons fish sauce
* 2 teaspoons olive oil
* 1 teaspoon dark sesame oil
* 1 jalapeño pepper, finely chopped
* 12 large lettuce leaves (about 8 ounces)
* 1/4 cup chopped unsalted, dry-roasted peanuts
Preparation
1. Heat a large nonstick skillet over medium heat. Add ginger and buffalo to pan; cook 7 minutes or until buffalo is done, stirring frequently. Drain buffalo mixture; place in a large bowl. Add green onions and next 8 ingredients (through jalapeño); toss well. Spoon 1/3 cup buffalo mixture into each lettuce leaf. Top with peanuts.
