These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.
Enjoy!

Lemon Garlic Halibut

This one is from the May 2009 issue of Men's Health. The recipe originally called for sea bass, but as an Alaskan, you can bet we use halibut for all white fish. :)
Makes 4 servings.
Ingredients:
* 1 lemon
* 2 cloves garlic, crushed
* 1/2 teaspoon crushed red pepper
* 4 6-ounce halibut fillets
* 1 1/2 teaspoons paprika
* 1 1/2 teaspoons cumin
* 2 teaspoons black pepper
* 1/2 teaspoon salt
* 1 tablespoon olive oil
Preparation:
Squeeze the lemon juice into a zip top plastic bag large enough to fit the fillets. Add the garlic and red pepper flakes, give the bag a shake, and add the fish. Refrigerate the bag for 30 minutes.
In a small bowl, mix the paprika, cumin, pepper, and salt. Remove the fillets from the bag and rub this spice blend on both sides of each. Heat the oil in a large nonstick skillet over medium heat. Add the fillets and cook for 6 minutes on each side.
