These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Chicken Parmesan

Jim's absolute favorite food. Need I say more?

Serves: 4 (serving size 1 chicken breast with 1/4 cup sauce and 1 4-inch slice of cheese)
Ingredients
* 1 egg, beaten
* 1 cup bread crumbs or corn flake crumbs
* 4 boneless, skinless chicken breasts (or 2 large ones cut in half), pounded to 1/2 inch thickness
* 2 tablespoons olive oil
* cooking spray
* 1 cup spaghetti sauce, divided
* 4 slices mozzarella (4 inches each or about 1 cup shredded)
Preparation
1. Preheat oven to 375 degrees.
2. Heat oil in a large skillet over medium-high heat. Dip each breast in egg, coat with crumbs, and fry in skillet for about 1 minute on each side (just long enough to crisp the coating).
3. Put chicken in a 9"x13" glass baking dish coated in cooking spray. Bake for 20 minutes.
4. Remove chicken from oven, spread sauce over the top of each breast evenly, top with mozzarella. Bake for another 5-10 minutes until cheese is melted.
Serve with spaghetti noodles and sauce.

  1. This is Keith's favorite food too! We put a little grated parmesan cheese in our breadcrumbs and a little spicy dried red pepper in our sauce, but otherwise the recipe is the same. Yum!
