that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).

Herb and Lemon Roasted Halibut

Fresh herbs give mild-tasting halibut vibrant flavor.
Yield: 4 servings (serving size: 1 fillet)
Ingredients
* 4 (6-ounce) halibut fillets
* 1 lemon
* 1 tablespoon extra-virgin olive oil
* 1 teaspoon chopped fresh thyme
* 1 teaspoon chopped fresh oregano
Preparation
Directions: Preheat oven to 425°. Coat a baking sheet with cooking spray. Place fish on pan. Grate lemon rind to measure 1 tablespoon; juice lemon to measure 2 tablespoons. Combine rind, juice, oil, thyme, oregano, 1/2 teaspoon salt, and 1/2 teaspoon black pepper; drizzle mixture over fish. Bake at 425° for 13 minutes or until desired degree of doneness.
