Ingredients
* 4 cans Great Northern beans (or other white bean)
* 1 jar hot picante sauce (or salsa)
* 3 large chicken breasts, cooked and shredded
* 1 8 oz brick pepperjack cheese, cubed
* 1 - 2 cups chicken broth, as needed
Preparation
1. Drain and rinse beans, put in a large soup pot over medium heat (or crock pot turned to low heat*). Mash with a potato masher until chunky. Add picante sauce, stir thoroughly. Add chicken and cheese.
2. Mixture will thin slightly as it heats, but you may want to add broth to get your desired thickness.
3. Serve when cheese is completely melted and mixed in.
*If you use a crock pot, this can go over low heat all day, stirring occasionally.
Sounds yummy, but that is the reddest white chili I've ever seen :) We'll need to give it a try (in a few weeks...) Keith loves this recipe too, if you want to try another easy one.
