These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.
Enjoy!

Spicy Maple-Cashew Popcorn

This is as delicious as it sounds! We had to keep wet napkins available to wipe off our fingers, but if you figure out a way for it to not come out so sticky, let me know! (I guess just use less syrup mixture, but I'd hate to lose the flavor.)

Yield: 6 servings (serving size: 1 cup)
Ingredients
  • 1/4  cup  unpopped popcorn kernels (about 6 cups popped)
  • 1/4  cup  dry-roasted cashews
  • 1/3  cup  sugar
  • 1/3  cup  maple syrup
  • 1  tablespoon  butter
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  ground red pepper
Preparation
1. Line a jelly-roll pan with parchment paper; set prepared pan aside. Pop popcorn according to directions. Stir in cashews.
2. Combine sugar and remaining ingredients in a small saucepan; bring to a boil. Cook 1 minute, stirring constantly. Remove from heat; cool 1 minute.
3. Pour hot syrup mixture over popcorn mixture; toss well to coat. Immediately spread popcorn mixture out onto prepared jelly-roll pan. Cool 3 minutes.
