These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Split Pea Soup

Jim's not a fan of split pea soup, but I LOVE it, so I figured tonight was the perfect night for it!

Yield: 4 servings (serving size: 1 1/2 cups)
Ingredients
* 5 cups water
* 5 cups chicken broth
* 2 cups green split peas
* 1 cup finely chopped yellow onion
* 6 ounces diced turkey ham (about 1 cup)
* 1 cup finely chopped carrot
* 1 cup thinly sliced celery
* 1 teaspoon freshly ground black pepper
Preparation
Combine first 5 ingredients in a large Dutch oven over medium-high heat; bring to a simmer. Cover, reduce heat, and simmer 1 hour, stirring occasionally.
Stir in carrot, celery, and pepper. Simmer, uncovered, 45 minutes or until peas are tender and soup thickens, stirring occasionally. Remove from heat; serve immediately.
