These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Banana Bread


Yield: 12 servings (serving size: 1 slice)
Ingredients:
* 1/3 cup apple sauce
* 2/3 cup packed brown sugar
* 2 large eggs
* 1 1/2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 2 cups whole wheat flour
* 2 ripe bananas, mashed
* 1/4 cup ground flaxseed
* 1/4 cup walnuts, chopped
* Cooking spray
Preparation:
1. Preheat oven to 350°.
2. Combine first 3 ingredients in a large bowl; beat with a mixer at medium speed. Add next 3 ingredients; beat until combined.
3. Add 1 cup flour and 1 banana; beat just until blended. Repeat. Add flaxseed and walnuts until well mixed.
4. Pour batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 55 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; cool completely.
