These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Beer-Battered Halibut

We had some friends over for dinner last night and pulled out this Alaskan favorite ~ leftovers need to be reheated in the oven, not the microwave!

Ingredients:
* Halibut fillets  cut into bite-sized pieces
* 2 cups flour, divided
* 7/8 cup cornstarch
* 2 1/2 teaspoons baking powder
* 2 tablespoons seasoned salt
* 1 1/4 teaspoons sugar
* 1 teaspoon garlic powder
* 1+ bottle of beer, better flat but not necessary
* 2+ cups oil for frying

Preparation:
1. Mix 1 cup flour with cornstarch, baking powder, salt, sugar, and garlic powder. Add beer until batter has consistency of cream.
2. Dredge halibut pieces in flour, dip in batter, and fry on medium-high heat until golden brown on all sides. Keep warm on a baking sheet in the oven (200 degrees) until ready to serve.
3. Serve on platter lined with paper towels or newspaper.

Tartar Sauce:
* 1 cup mayonnaise
* 2 tablespoons lemon juice
* 2 large dill pickles, diced
* 1 tablespoon garlic powder
* 1 teaspoon black pepper
Mix all ingredients in a small bowl, serve with fish.
