These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Spinach & Egg Breakfast Quiche

Our wonderful friend Kristen made this for a holiday that we spent together with her family, and I immediately needed the recipe ~ spinach, feta, and egg in a buttery pie crust? The perfect trifecta for this Greek girl! :)


Ingredients:
* 1/2  cup butter
* 3  garlic cloves, minced
* 1/2  cup onion, diced
* 1  10 oz  package frozen chopped spinach, thawed and drained
* 6 oz  feta, crumbled
* 4 oz  cheddar cheese, shredded
* salt and pepper to taste
* 1  pie crust
* 4  eggs
* 1  cup milk

Preparation:
1. Preheat oven to 375 degrees.
2. In a large pan, saute garlic and onion in butter; stir in spinach, feta, and half of cheddar.
3. In a large bowl, whisk together eggs, milk, salt, and pepper. Add spinach mixture to eggs and mix thoroughly.
4. Pour egg mixture into pie crust; place pie tin on a cookie sheet and bake for 15 minutes. Sprinkle other half of cheddar over the top and bake for 35 - 40 more minutes. Quiche will puff and then settle; serve hot or cold!
