These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Halibut Curry

This is one of Jim's absolute favorite recipes ~ when he came home after being deployed for 9 months, this was the first meal he requested. Need I say more?


Yields: 4 servings
Ingredients:
* 1 cup uncooked rice (I use a blend of white and whole grain brown)
* 2 tablespoons butter
* 1/2 cup onion, chopped
* 3 garlic cloves, minced
* 2 tablespoons curry powder
* 12 ounces skinless halibut filet, cooked and flaked
* 1 can cream of chicken or mushroom soup
* 1 (6-ounce) container plain fat-free yogurt
* 1/2 cup milk
* 2 tablespoons lemon juice
* 1/4 cup peanuts, chopped

Preparation:
1. Cook rice according to package directions.
2. Melt butter in a large skillet. Saute onion, garlic, and curry. Stir in soup, yogurt, milk, lemon juice, and halibut; simmer for 20 minutes.
3. Serve about 1 cup curry over about 1 cup cooked rice, sprinkle with 1 tablespoon peanuts.
