These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Mediterranean Chicken

We tweaked this recipe a bit to match our tastes, and it was really good!

Yield: 2 servings

Ingredients:
1/4 cup chopped frozen spinach, thawed and drained
2 tablespoons feta cheese
2 tablespoons diced sun-dried tomato
4 kalamata olives, chopped
2 (4-ounce) skinless, boneless chicken breast halves
1/8 teaspoon salt
1/8 teaspoon pepper
Cooking spray

Preparation:
1. Preheat oven to 350°.
2. Combine spinach, feta cheese, diced tomato, and chopped kalamata olives. Cut a 1-inch-wide slit into the thick end of chicken breast halves, and carefully cut down to center of chicken to form a pocket. Divide cheese mixture evenly among pockets. Secure with wooden picks. Sprinkle chicken with salt and pepper.
3. Heat a large ovenproof skillet over medium-high heat. Spray pan with cooking spray. Add chicken to pan; sauté for 4 minutes. Turn chicken over.
4. Bake at 350° for 12 minutes; let stand for 5 minutes.
