These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Wild Rice Pilaf

I found this recipe on allrecipes.com when I was looking for a way to use some of the fabulous 100% wild rice I have in the fridge. We served it with the Seared Salmon with JalapeƱo Ponzu, substituting boneless skinless chicken breasts for the salmon since we're all out of our stash now (time for a trip to Alaska!) Fantastic!

Yields: 4 servings 

Ingredients:
  • 1-1/2 teaspoons olive oil
  • 1/2 large onion, chopped
  • 1 large carrot, chopped
  • 1 stalk celery, diced
  • 1 clove garlic, minced
  • 1-3/4 cups chicken broth
  • 1/2 cup uncooked wild rice
  • 1/3 cup uncooked regular long-grain white rice
  • 1 tablespoon chopped fresh parsley
Directions:
1. Heat oil in large skillet over medium heat. Add onion, carrots, celery and garlic and cook until tender. Stir in broth and wild rice. Heat to a boil. Cover and cook over low heat 25 minutes.
2. Stir in white rice. Cover and cook over low heat 20 minutes or until rice is done. Stir in parsley.
