These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Blue Cheese Smashed Potatoes

These alongside Buffalo Chicken Thighs/Breasts with celery sticks ~ perfect!


Yield: Serves 4
Ingredients:
1 pound small red potatoes 
1/3 cup fat free blue cheese dressing
1/4 cup crumbled blue cheese
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preparation:
Place potatoes in a saucepan; cover with cold water to 2 inches above potatoes. Bring mixture to a boil over medium-high heat. Reduce heat to medium, and simmer 15 minutes or until tender; drain. Return potatoes to pan. Add dressing, blue cheese, salt, and pepper to pan; mash with potato masher to desired consistency.
