These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Grilled Summer Squash

We had this with the Grilled Salmon and Brown Butter Couscous ~ so yummy!

Yield: Serves 4 (serving size: 3/4 cup)
Ingredients:
2 cups baby zucchini, halved lengthwise
2 cups baby yellow squash, quartered lengthwise
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
Cooking spray

Preparation:
Preheat grill to medium-high heat. Combine baby zucchini and baby yellow squash in a large bowl. Add ­olive oil, kosher salt, and black pepper; toss well. Place ­vegetables on a grill rack coated with cooking spray. Grill 5 minutes on each side or until lightly charred and tender.
