These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Sour Cream-Chipotle Potato Salad

We had this as a side with Chipotle Salmon Burgers, and they went great together!

Ingredients:
3 pounds cooked and quartered baby red potatoes
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup thinly sliced green onions
1/3 cup chopped fresh cilantro
2 tablespoons sauce from canned chipotle peppers in adobo sauce
3/4 teaspoon lime zest
2 tablespoons lime juice
Salt and freshly ground pepper to taste

Preparation:
Stir together potatoes, mayonnaise, sour cream, green onions, cilantro, adobo sauce, lime zest, and lime juice. Season with salt and freshly ground pepper to taste just before serving.
