These are some of our favorite recipes, mostly from Cooking Light, but we tend to edit portions and ingredients
that suit our taste buds (e.g. when a recipe calls for 1 minced garlic clove, we use about 4 :) ).
Other recipes are passed down from family and friends.

Blackstrap Molasses Oatmeal Bars

My big sis is expecting their second child early next summer, so I was looking into healthy foods for expecting mommies. Blackstrap molasses came up, which I'd never heard of, and then also things like ginger (to help with morning sickness), oats, whole wheat, and bananas, so I did a google search of recipes that use these ingredients. This one came up, which I've tweaked a bit (including adding cranberries, chocolate chips, and walnuts) to get a palatable flavor and consistency. :)
You can add more flour to get a breadier effect, leave out the sweets (or leave them in!) for a good breakfast bar, or put a powdered sugar glaze on it for a relatively healthy dessert ~ so versatile!

Servings: 12
Ingredients
* 2 ripe bananas, mashed
* 1/2 cup blackstrap molasses
* 2 teaspoons vanilla
* 1/2 cup whole wheat flour
* 2 cups oats
* 1 teaspoon baking soda
* 2 teaspoons powdered ginger
* 2 tablespoons grated fresh ginger
* 3 teaspoons cinnamon
* 1/2 cup dried cranberries
* 1/2 cup chopped walnuts
* 1/4 cup semi-sweet chocolate chips
Preparation
1. Preheat oven to 350 degrees.
2. Mix all ingredients, in order listed above, in a large bowl
3. Spread in a greased 9" x 13" glass baking dish and bake for 20-25 minutes at 350°F.
4. Wait until bars are cool enough to touch before cutting into 12 equal bars.
These are best warm but can be eaten cold with a glass of milk too.
